Jon’s Christmas Stollen
Ingredients
½ cup raisins
½ cup candied mix peel
2 tablespoons brandy
3 ½ cups plain flour
¾ cup sugar
¾ cup ground almond
2 tsp baking powder
¼ tsp salt
½ tsp ground cardamom
¼ tsp nutmeg
½ cup butter
1 cup cottage cheese
2 eggs lightly beaten
½ tsp vanilla essence
½ cup finely chopped walnuts
2 tablespoons melted butter
1 ½ cup Icing sugar
2 tablespoons milk
200g marzipan
Glace cherries and whole almonds
Method
Combine 1st three ingredients and stand for 1 hour at room temperature
Combine the next 8 ingredients – cut in the butter with a food processor or mixer until the mix resembles a coarse crumb.
Blend the cottage cheese until smooth and add the eggs, vanilla, raisin mixture, and walnuts
Add all this to the crumb mix, stir until moistened and all incorporated, shape the dough into a big ball and turn out onto a floured surface and knead until smooth (2-4 minutes)
Roll out the dough to form an oval shape approx. 12 x 8 inches, brush with melted butter and broken up bits of marzipan dotted randomly
Fold the dough over length ways to within 1 ½ inch of the opposite side
Place on a lined baking sheet and bake at 160-180-degree c for approx. 45 minutes until light brown in colour
Remove and brush with the remaining melted butter and cool on a wire rack
For the frosting
Mix the icing sugar and milk together until smooth and drizzle over the Stollen top with the cherries and almonds and enjoy!
